Potatoes tomorrow and tomorrow

Tomorrow we begin the process of breaking down starch into amylose.  This occurs after starch is broken down into simpler sugars via Amylase Enzyme or the catalyst commonly found in human saliva.

Our sample was better behaved today 

Temperature inside the incubator was 23.2 C down a sweltering 9.6 C since yesterday. 

Outside of the hermetic jar 

23.6 C

A massive difference of 2.3 C!

The temperature of the sample was down 5.0 C too which puts us into the goldilocks zone of yeast reproduction. Where Brix was down 0.7 % And SG -0.003. It was time to add some steroids so we have our yeast vitamins, fertilizer drops - sulphur, and 1/4 sugar.
