Sometimes it Pays to be Hypervigilant
Keeping a close watch in these initial stages is of the utmost importance. As yeast cells will die off to some degree but it is from the cell death that Bions come and with their emergence new life

Approximately 8:45pm I came downstairs to monitor the sample to find the incubator at 31.5 C
40 C Cell death starts we simply cannot have that!
The outside of the vessel was convecting heat rapidly between 22.3 C and 27.8 C when we measured the yeast it was a whopping 35.7 C !
Brix was still about 9.5
And SG was 1.038 only -0.001 in a few hours but pH was within nominal range. Vessel weight was : 1,284 G after sample was removed some heat shields were removed to allow for venting. 1/4 cup sugar was dispensed to sample measuring only 1.045 SG but back to 11.2% Brix much sugar sank to the bottom so this would act as a reserve supply.
Tomorrow I will take a microscope sample.
