We're doing it again...
Our Homunkuyeast Osiris is a peppy fella his shit hit the Brix at 21% today about 1.078 SG. He was nice and snug in the 22.8 Degree Celcius Incubator. He was also acidic at 4.8 and I thought :goooood! I checked he was about 22.5 Degrees Celsius so I snapped a couple pics

Analyzed Sol Madonna as well:

Her sugar level had dropped to 7% Brix at this point I thought - with all this sugar dropping I should drop some sugar too ! Each sample received 1/3 of a cup white sugar and an Oscar nomination for "Best Yeast" The pretty lady had a temperature of 22.4 Celsius too with a proud pH of 4.8
I was so tickled I took these pics:
