The Fermentation
Tis Saturday the 14th , October 2017
Tonight one final genetic transfer must occur with RL5 the third cycle of dissolution being complete.
It is now time for separation - separation of the Genetic Species. New Genetic diversity must be introduced to ensure the species does not attain the usual low alcohol tolerance of most strains.
A new type of yeast strain must therefore be cultivated from a different type of vector. So in our next yeast culture the primary culture will derive from Mandarin oranges.
This will give us different sugar yield
Different than that of grapes
Total sugar yield would have been 146g for this wort. SG was calculated at 1.105 and potential alcohol at 15%
A video coming up tonight lots to blog!
