Tales of Yeasterday

Here we are on Day 3 and what do we find growing on cycle 2 yeast ? The unnerving Kahm again ! Though easily removed it has absorbed a great deal of sugars from the cultivated yeast

It seems the strain of Kahm yeast were dealing with isn't particularly persistent as after removal it shows no signs of regression within 24 hours whew!

The bubbles are escaping CO2 if left unchecked the Kahm would overwhelm the culture and well eat it

Today's measurements are:

Primary- Benjamin

pH 4.8

Brix 9% 1.035

This is perfect as it indicates the culture is eating the sugar

Temp:26.1 ideal!

Regeneration- Benny

pH 4.8

BRIX 6% 1.025

Indicative that the Kahm is storming Benny

Temp:25.9

Thick viscous layer insulates the yeast below creating a cooler environ for Benny.

What's planned ?

Cycle 1 - Day 1-2 begin Benjamin

DAY 3 - Start Genny

DAY 3-7 feed

Cycle 2-Day 1 - Day 8 overall

Add new cells from Genny to Benjamin to refresh Available DNA reducing mutations
